Easy healthy snack

Protein balls
1 cup granola (any kind)
1 cup peanut butter
1/2 cup honey
1/2-1 c protein powder ( I use vanilla flavor)
Mix all ingredients in bowl and roll in to 1 inch balls ( if the mix is really sticky sprinkle in a little coconut)

Then roll into coconut (I put the coconut on a plate and roll in coconut as I make each ball)
Then put in refrigerator to let all the ingredients to set and harden
Eat and enjoy!! :)

Pretzels

So a lot of gluten free pretzels are wicked expensive. I've found these that are yummy and not only gluten free but egg, lactose, milk and casein free too! Instead of so much salt like alot of pretzels have these have a ton of sesame seeds which give them a different taste. And the best part I can usually find them for like $2 at the grocery store :)

Soy sauce

I was surprised to find out soy sauce had gluten in it!

Gluten free tip: talk to other people buying gluten free at the store

I was purchasing an expensive organic gluten free soy sauce at the grocery store and the manager, who was helping to bag groceries that day told me she had recently started eating gluten free after finding out she had celiac. She said she had spoken to a customer one day who shared with her that La Choy lite soy sauce didn't have gluten. So sure enough after checking it out, it's a true fact! No more wasting money on that expensive soy sauce: La Choy is just as good :)

Easy meal

Brown rice has become a big part of my diet with eliminating a lot of pasta and bread. I eat brown rice like pasta though and put all the same toppings on it (ref sauce and parmesan cheese especially). This steam fresh brown rice is so convenient. I hate how long boiling and cooking brown rice takes. You can throw this in the microwave and it's ready in 5 minutes. Great to grab quick on the go for work, especially if you have a salad bar. I love to toss in some veggies and top with feta cheese.

Otto's Gluten Free Pizza

Yay! Otto's finally has gluten free pizza! I ate four whole slices and didn't get a stomach ache! I visited the Cambridge location to pick up my pizzas and staff was very excited about the product saying "there's a big market out there" for gluten free pizza. Each pizza came on its own little disposable pan so that it wouldn't touch any of the other regular pizza crusts. The pizza stayed right on this pan while being put in the box which helped the pizza stay warm on the drive home. The crust was buttery and crunchy! My room mate even said if I hadn't told her the crust was gluten free she wouldn't have even known it was :-) I enjoyed the Potato, Bacon and Scallion pizza which its Ottos most popular and my favorite as well. We also got the Chicken, Mushroom, and Fontina and added Spinach for an extra vegetable (trying to be healthy eating pizza even though the first one is like a loaded baked potato). And to wash it all down a "palmer" half tea-half lemonade in a cute Otto cup! My other favorite pizza that I will be getting next time is the Butternut Squash, Ricotta, and Cranberry. Overall, thumbs up for Otto's first and definitely not the last day of gluten free pizza!

Check out their website and see where all of their locations are @ http://www.ottoportland.com/
